Vegetable Rice Soup
This is a recipe that I make very often on weekends, especially if I have leftovers from other recipes, specifically, Spanish Rice and Tortilla Pizza. If I use vegetable broth, I try to use broth I've made from cutting up vegetables for lunches during the week. The weekend gives me the time to put the broth together.
Ingredients: 4 cups vegetable broth 1 1/2 cups leftover Spanish Rice 1/2 cup leftover peppers, onions and mushrooms Directions: 1. Pour 4 cups of broth into a large saucepan and begin heating. 2. Add leftover rice and pepper mixture 3. Heat just to boiling, breaking up rice clumps if necessary 4. Season as desired I make this soup with the above ingredients, because they are things I often have on hand. If I don't have Spanish Rice, I may have some Rice Pilaf from dinners during the week. Any other veggies that are hanging around are fair game as well, like zucchini. |
