Turkey Salisbury SteakAt our house, we've taken beef almost off the menu, as much as we love it. When we do choose to include beef, it's a treat of a wonderful steak or roast. Hamburger was the first casualty. If I can make a reasonable substitution with ground turkey, I'll make it. The problem was that ground turkey at first can't stand on its own as a meat. It was fine in dishes that included ground beef, as long as there was sauce, vegetables, and pasta, but plain turkey burgers? Not at first. Then it happened... our minds and mouths moved away from beef. Turkey burgers are more than edible, they're good! So the next step was to see if a turkey burger could play a major role as the STAR of a dish, like Salisbury Steak which is extremely meat dependent. You know what? It works! Ingredients: 1 package of ground turkey (I use 93% lean, and it comes in 20 oz. packs) 1/4 cup seasoned bread crumbs Gravy: 1 package 1 medium to large sweet onion oil for sauteeing Directions: 1. Mix the turkey and the seasoned breadcrumbs 2. Divide meat into 4 portions and form into burgers 3. Fry burgers in non-stick pan until done - they will release a lot of water 4. Place burgers aside 5. Slice and saute the onion in oil until it starts caramelizing 6. Mix the gravy (one cup cold water and the package) then add to onions (or sprinkle the gravy mix into the pan and add the cold water, then mix) 7. When gravy thickens put heat on very low and add the burgers in 8. Cover burgers with onion gravy and keep it moving until they're heated through This recipe is great served with plain while rice and a nice vegetable. When forming the burgers, make them wider than you think you need, because turkey burgers tend to shrink side to side and puff up in the middle. Enjoy! |
