Tortilla Roll UpsThese little appetizers are great to bring as a pot luck item. They go together pretty easily, and have a nice smoothness. They taste much more complicated than they really are. The cream cheese and salsa do most of the flavor work here; the chives, bacon bits, and olives give it more visual appeal.
INGREDIENTS: 2 - 8 ounce containers of whipped cream cheese with chives 1 cup medium salsa 1 small can chopped olives (or sliced olives chopped up) 2 Tablespoons imitation (or real) bacon bits 10 - 10 inch flour tortillas DIRECTIONS: 1. Combine cream cheese, salsa, chopped olives and bacon bits. Soften tortillas as you go by putting them on a warm griddle (or pan) for a few seconds until they're more pliable. Spread a small amount (about 2 Tbls) of the cream cheese mixture on each tortilla and spread thinly with a rubber spatula. Roll the tortillas up jelly-roll style and place into a container to refrigerate over night or for several hours. 2. Slice into 1/2 to 3/4 inch slices and put on a tray to serve. About the first inch of each end is useless. |
