Sauces, Dressings, and Marinades
A sauce can be simple or complex - both in preparation and flavor. A sauce can be the "star" of a recipe, or a real team player. A white sauce, like bechamel, is one of the "mother sauces" upon which many sauces can be based. A tomato based sauce is perfect for pasta. It can include meat as part of the preparation, or be a simple marinara sauce, with no meat at all.
A good marinade will not only give meat a great flavor, but will tenderize the meat as well. To do this, a marinade usually has some kind of acid in it, like vinegar or citrus juice. One of my favorite marinades for chicken is a simple bottle of Italian dressing. You can marinate chicken for several days, and it only gets more tender and flavorful.
