Egg RollsI'm not 100 percent sure I should call these egg rolls. They don't have meat in them. They might be called spring rolls. Whatever, I like them.
Once again, I went on a search for a recipe that I could use that used just a few ingredients and tasted pretty much how I wanted them to. Ingredients: cooking oil 1 medium to large chopped onion 1 1-pound package tri-color cole slaw shreds 2 Tablespoons soy sauce 4 green onions (aka scallions) chopped - Optional 1 package egg roll wrappers (usually sold near the tofu and meatless products) Directions: 1. Heat cooking oil in large pan (dutch oven) and saute chopped onion for a few minutes until it is translucent. (about 3 to5 minutes) 2. Add cole slaw mix and continue tossing mixture to wilt the cabbage 3. Add about 2 Tablespoons of soy sauce and toss to coat. 4. Stir to coat. 5. Add chopped green onions, if desired and stir to coat Let the mixture cool for a while so it's easier to handle. Assembly: 1. Turn an egg roll wrapper so it's a diamond, one corner toward you and one away. 2. Place about 1/4 cup of filling on the wrapper, just below the center, going crosswise. 3. Fold the bottom point up. Fold the side points in. Roll up the rest of the way, tucking in dough if necessary. I keep a small bowl of water on hand to moisten the dough wrappers if needed. It makes the dough immediately sticky, and everything stays nice and closed. The wrappers are a bit fragile, so treat the carefully. If you work slowly, keep the wrappers covered with plastic wrap or a moist paper towel so they don't dry out. I looked on the Internet and YouTube for instructions for how to roll these things. That was a very good thing to do. Cooking: The filling is already cooked, and there's not meat, so these really just need to be browned up and heated. I really wanted to bake these. I sprayed the baking sheet with cooking spray and sprayed the rolls with cooking spray and then baking at 400 for about 15 minutes. I really did NOT like it. One video I watched suggested brushing them with olive oil then baking, but that just seemed like too much oil. I might have been more satisfied with the results. The next time I try these, I will be digging out the Fry Daddy to give them a quick deep fry. I think it'll be worth it. I plan on deep frying for just a few minutes to brown them up. I can always heat them more in the oven if I need. I'll keep you posted. |
