Sweet and Sour SauceThis is a variation of a recipe I found on my favorite cooking site.
Ingredients: 2 Tablespoons corn starch 1/2 cup cold water 1 8 ounce can pineapple chunks or pieces, drained with juice reserved 1/4 cup cider vinegar 1 cup white sugar 2 medium carrots, chopped Directions: 1. Combine the corn starch and cold water to make a slurry. Set aside. 2. Combine pineapple juice, vinegar and sugar in a saucepan. 3. While heating the sugar mixture, soften the carrots by microwaving for about one minute. 4. When sugar mixture is hot, add corn starch mixture. Lower heat and continue heating until mixture begins to thicken. 5. Add pineapple and carrot to the sweet and sour mixture. Continue to cook on low about 5 minutes until mixture is thick. This is a nice, easy, and fun-tasting sauce. Not very complex, so it's not fancy. I served it with chicken and other vegetables over white rice. Peppers, onions, mmmmm! |
